White Chicken Chili

One of the easiest recipes to make and a favorite for Andrew and I, especially when you have company coming for a relaxing evening or for a potluck.  This recipe makes a fairly large pot full and is very filling, so you don't end up eating a lot of it at once.  I like using this recipe when we have a larger group of people coming over and everyone is bringing a little something to add to the menu.


3 large Chicken Breasts
1 large can of White Northern Beans
1 large jar of Salsa - (your choice: mild, medium, or hot)
8 oz of Cheddar Cheese
4 oz of Pepper Jack Cheese

 Cube and Fry chicken.
Mix the rest of the ingredients in a large pot on medium heat until the cheese is thoroughly melted.
Add Chicken to the pot at any time, once it is cooked.
Serve with Tortilla Chips.
Takes about 20-30 minutes cook time.
